This dish is cooling and moistening, making it ideal for summer. Kombu and shiitake support the Kidney and Immune systems, while carrots strengthen the Spleen and aid digestion. Ginger adds a gentle warming quality that balances the cooling ingredients. Pumpkin seeds nourish the Blood, support Liver, Kidney and Stomach/Spleen health.
